How to make this dish step-by-step

Ingredients

  • 1 Head of Cauliflower

  • 400 grams White Beans (cannellini or butter beans), rinsed

  • 1 tbsp Olive Oil

  • 1/2 Small Brown Onion, diced

  • Creamy Cashew Sauce
  • 3/4 cup Cashews or Sunflower Seeds, soaked for 1 hr or boiled 10 mins

  • 1/2 cup Vegetable Broth

  • 2 tbsp Tapioca Starch

  • 1.5 cups Unsweetened Plant-Based Milk (ideally soy)

  • 2 tbsp Nutritional Yeast Flakes

  • 1 tbsp White Miso Paste

  • 1 tsp Onion Powder

  • 1 tbsp Lemon Juice

  • 1 tsp Salt (adjust to taste)

  • Bread Crumb Topping (optional)
  • 1-2 Slices of Day-Old Sourdough Bread (GF if you prefer)

Directions

  • Preheat oven to 200°C (fan-forced).
  • Cut the cauliflower into florets. Finely dice the onion. Add cauliflower and onion into a baking tray with olive oil and salt.

  • Next, tear or blitz sourdough into rough coarse crumbs (not too fine – think rustic panko). Toss in a bowl with olive oil and any seasoning you’re using. Optional: Lightly toast in a dry pan for 2–3 minutes before baking for extra crunch.
  • Once the cauliflower and onion have softened and become golden – remove from the oven.
  • At this point, add rinsed and drained white beans and pour over the creamy cashew sauce.
  • Sprinkle on the sourdough bread crumb topping. Place back into the oven for a further 10 minutes or until the topping becomes crispy. See note.

Notes

  • To get your topping crispy – it may be beneficial to turn your broil or grill setting on. Be careful to not let it burn on this setting.
