How to make this recipe

Step 1 – Blend the base

Grab your blender and toss in the strawberries, plant milk, vanilla, and a little maple syrup. Blend it up until it’s smooth and creamy. Taste it here – if you like it sweeter, add a touch more maple. Note: if you don’t have a blender you can absolutely use a hand blender / stick immersion blender too!

Step 2 – Add the chia magic

Pour that pink goodness into a bowl or jar, then stir in your chia seeds. Give it a good mix so the seeds don’t clump. Tip: stir again after 5 minutes – this really helps keep it silky instead of lumpy.

Step 3 – Chill time

Pop it in the fridge for at least 2 hours (overnight is even better). The chia seeds will soak up all that strawberry flavour and turn into a thick, pudding-like texture.

Step 4 – Layer it up

When you’re ready to serve, spoon some chia pudding into a glass or jar, then add a layer of coconut yogurt for that “cream” moment. Repeat if you want it fancy.

Step 5 – The fun part: toppings

Add fresh strawberry slices on top, maybe some granola or crushed nuts for crunch. Even a sprinkle of coconut flakes works a treat.

Tips for perfecting this chia pudding

  • Blend smooth: Make sure your strawberry base is fully blended so you don’t end up with chunky bits.
  • Sweetness check: Strawberries can vary – taste the mix before chilling and adjust maple syrup as needed.
  • Mix twice: Stir the chia in, then stir again after 5–10 mins to stop clumps from forming.
  • Chill long enough: A minimum of 2 hours works, but overnight gives the best thick and creamy texture.
  • Use a thick yogurt: Coconut yogurt (or Greek-style plant yogurt) makes the “cream” layer rich and dessert-like.
  • Play with toppings: Fresh berries, granola, or nuts add texture and make it feel more indulgent.
  • Jar it up: Make individual portions in jars for grab-and-go breakfasts or snacks.
